Day 4 of the 12 Days of Holiday Cookies - Aloha Cookies

If you were to ask my husband, kids, or friends they’d tell you I’m 100% in love with the Hawaiian Islands specifically Maui. We have lots of artwork in our home that we’ve picked up on our different trips, many of my tattoos incorporate tropical/Hawaiian flowers, and I even have a tattoo of the Islands with the longitude and latitude of Maui, so, when the fires happened in Lahaina and other parts of Maui my heart broke. As I’ve mentioned previously my goal with the 2nd Annual 12 Days of Holiday Cookies was to incorporate cookies that I’ve never tried before, and then after the fires I had a pull to bake cookies with a tropical theme to them, hence today’s Aloha cookie.
As in the previous days, I pulled out all of my ingredients and set them out on the counter so that the butter could soften. One of the ingredients in this cookie that my husband is still shaking his head over is instant mashed potato flakes. I’m not sure why it’s in the cookie but away we went. You should also know that I used candied dried pineapple in my cookies instead of just dried pineapple.
This is another cookie that felt like it came together quickly. What I didn’t realize though was that the dough needed to sit and chill for an hour, so I turned my pre-heated oven off and waited. I was surprised by how big the dough ball was, and am curious to see if I get 6 dozen cookies out of this recipe. We have hit the point in my baking where we are freezing cookies.
Once the dough had chilled out it was time to bake. I pulled out my trusty cookie scoop and got to work. I will say I was a little concerned when I read the bottom of the recipe and it said it made 6 dozen. In the end, I got a total of 45 cookies so right around 3 dozen. The recipe said to bake for 15 minutes or until golden brown. It took 12 mins for me as I have a convection oven and things seem to cook faster with the air moving around. I pulled them out and let them cool on the try for 5 minutes before moving them to the cooling rack
I have to say this is one cookie that I was very excited to taste and it did not disappoint. It is a very soft light cookie with a slight taste of the coconut and pineapple. It’s enough to give you a tropical vibe without being overpowering. This cookie will delight and surprise those who receive it during the holidays and is a great reminder during the cold winter months that before you know it spring and sunshine will be here.
