Growing up in Klamath Falls, meant we always had to travel to see my Grandparents. The trips were not day trips because one set of Grandparents lived two hours away while the other lived three hours away. Therefore it was always special when we traveled over the river and through the woods to go see them. I loved being able to spend quality time with them, even when we had to journey to see them in the middle of winter on snowy roads (thanks Southern Oregon for those few trips that were a bit sketchy), however they are memories that I will always cherish.
One of those cherished memories involves my Grandma Horak’s Old Fashioned Bean Soup. Grandma knew that this was my favorite soup, and after a long, slow drive in the winter it was always so nice to walk into her house filled with the smell of this tasty soup. She always had potato rolls as our side, and I loved having the soft pillowy rolls with butter to dip into my soup.
I love how the smell and/or taste of food can take you back to a specific place and time. To this day when I eat this soup I’m transported back to my childhood, sitting around her giant dining room table and enjoying our time together. I think that's one of the most amazing things about food – it has the power to evoke so many memories - it's like a time machine of sorts! I hope that you will love this soup as much as I do.

OLD FASHIONED BEAN SOUP
1 cup navy beans - be sure to soak them overnight
2 qts water or chicken broth
Ham bone - you can add extra ham if you’d like
1 onion chopped
½ cup celery chopped
½ tsp salt
1 bay leaf
â…“ tsp pepper
1 tsp parsley chopped
Add all items into a stock pot on the stove and let simmer all day, or you can dump everything in a crockpot and let it cook on high all day. You can move it to low if need be, however you want to be sure the beans get cooked.
